Stay out of her grab range. Make sure to put up plenty of f-air walls because those stop Sheik right in her tracks. Also, when you're in the air like that, you're where she can't grab you. If you're still having difficulties approaching Sheik, don't hesitate to use dash attack. Similar to Peach, dash attack is arguably Kirby's best move because it stays out for so long and has relatively large hitboxes. There's a useful tech that you can perform to grab instantly when you use it off a platform. I will provide a link that further explains this tech.
