Is there any way for me to change or lower the sensitive on the Analog so that I don't Analog to jump. I'm really new to Melee and been playing Ultimate since launch. I'm using Slippi.

Analog to jump

There is no way to do that for a slippi match unfortunately. Meddling with the inputs on the analog stick would also interfere with other inputs so it wouldn't be a good idea to begin with.
You can disable stick jump outright in modified version of melee like the 20XX training hack pack for practice. There is also a gecko cheat code available for that here. Again, that's just for practice alone.
