As someone used to a custom setup for tilts, I need help in melee

As the title mentions, I used to play Brawl/Sm4sh using the C stick for tilt-based attacks. Now that I (finally) picked up melee, I'm having trouble performing tilts, as every time I try I end up jumping or charging a smash. I know that moving the directional stick a little bit will trigger tilt attacks, but I can't get the precision down. Any ideas?

Well, yeah, don't move the stick all the way.

If you really can't manage practicing this in melee, maybe you could give F-zero a shot. Racing games will teach you pretty quickly that moving the stick all the way for every little turn you want to make is not a very good idea (because you'll overshoot and fly off the level / crash into walls all the damn time, and it's fairly intuitive. Hold less far to the left to take a lighter left turn.)

I actually had the same problem. I was terrible with getting out tilts like I wanted. What I did that worked for me was taking it slow at first. So, essentially you just carefully and deliberately tilt the stick and hit A. Little by little I was able to become more and more precise. So it's a bit of a grind but it's pretty simple
