So what makes something a true combo and a... not true?... Combo

From my understanding (though I may be wrong), a "true" combo is one that works all of the time and is impossible to escape from if actually done correctly. An untrue combo (or "string") is a combo of any other kind. Typically, you can use DI (directional influence) to escape strings, but the same can't be said for true comboes.

There's a lot of variance and overlap in how these terms are used, and you won't find a clear dividing line, but broadly speaking, Knee is correct.

To be a little more specific and technical, a true combo usually means a combo where the next hit occurs when the opponent is still in hitstun from the prior hit. Sometimes including the startup of whatever option you would take to avoid the next hit in to consideration, like saying a combo is true on frame 3 airdodges but not frame 2 ones. Generally, if you can DI out of a combo, but it's possible to follow the DI and keep it "true" by the hitstun sense, it's still considered a true combo. And then a string or regular combo would be just a series of hits that could be escaped.

But you'll also see people use combo to mean a true combo for short a lot too. Which makes things confusing sometimes. Just depends on the context.
