An update to my previous entry (maybe it would be better for me to wait for the next Nintendo Direct to see who gets added, but I figure it's been a while):

Pyra and Mythra, since they were added to Smash since I last updated this
-changed the Xenoblade Chronicles 2 character to
Elma (I originally had Rex and Pyra, but Rex probably wouldn't work well on his own) - I know that she's mainly in Xenoblade X, but she's also in Xenoblade 2, she's owned by Nintendo unlike KOS-MOS, and I'm not far enough into Xenoblade 2 to know who would be interesting/noteworthy enough. Also, I don't like the idea of Xenoblade Chronicles X being ignored because it's seemingly the only major first party Wii U release that isn't getting a port or direct sequel on the Switch.

Meganium for New Pokemon Snap - she's the first Illumina Pokemon that you encounter, she's on the game's box art, and Gen. 2 doesn't get a ton of love in Smash - more than gens 3 or 5, but the only playable Pokemon from gen. 2 is Pichu

Makoto Nijima for Persona 5 Strikers - most of the Persona 5 cast could work well for a fighting game (give us Persona 5 Arena, Atlus!), but out of all of them, I feel like Makoto would make the most sense.
